White Chicken Chili

Ingredients

  • 1 lb boneless skinless chicken breast, diced
  • 1 medium onion, chopped
  • 1 1⁄2 teaspoons garlic powder
  • 1 Tbsp vegetable oil
  • 2 cans great northern beans, rinsed and drained
  • 1 ¾ cup chicken broth
  • 1 tsp oregano
  • 1⁄4 tsp cayenne pepper
  • 1 cup low fat sour cream
  • 1⁄2 cup skim milk
  • 2 Tbsp chives
  • Salt and pepper to taste

Directions

  • In large saucepan, sauté chicken, onion and garlic powder in oil until chicken is no
  • longer pink.
  • Add beans, chives and seasonings and chicken broth.
  • Bring to a boil.
  • Reduce heat and simmer for 30 minutes.
  • Stir in sour cream and milk.
  • Serve immediately.
