Turkey Burger Bowls

Ingredients

  • 1-pound ground turkey
  • 1 egg
  • Salt and pepper to taste
  • 2 ½ cup low fat shredded cheese
  • Chopped red onion, diced tomatoes, and shredded lettuce for serving

Directions

  • Preheat oven to 400°F
  • Grease a 12-cup muffin tin with cooking spray
  • Put ground turkey in a bowl. Add egg, salt, and pepper and mix well using your hands.
  • Add a small handful of the meat mixture to each muffin cup. Press the meat down and up the sides to create a bowl.
  • Distribute cheese evenly among the cups and bake for about 15 minutes until cheese is melted and meat is cooked through. Let cool.
  • Using a spatula, carefully work the cups out of the pan and onto a serving plate.
  • Add desired amount of lettuce, tomato, onion.
  • Drizzle sugar free ketchup/barbeque, mustard, or another light condiment of choice and enjoy!
