Cheesy taco shells

  • 1 cup low fat shredded cheese
  • Pepper to taste
  • ½ pound ground turkey
  • Shredded lettuce, chopped red onions, diced tomatoes, and other desired toppings

Directions

  • Preheat oven to 375°
  • Line a small baking sheet with parchment paper and lightly spray with cooking spray
  • Place 2 piles of ½ cup of cheese on the parchment paper. Season with pepper, if desired.
  • Bake for about 5-7 minutes, until cheese has melted and is a little crispy.
  • Blot excess grease with a paper towel
  • Raise a cooling rack on top of 2 cups placed upside-down on a countertop. Place the cheese in the rack to hang and form shells. Let cool.
  • While that’s cooling, cook ground turkey and prepare vegetables. Assemble tacos and enjoy!
