- 2 large zucchini, thinly sliced
- 1 ½ cups low fat grated Parmesan
- Salt and pepper to taste
- Marinara, for dipping
Preheat oven to 400°F and prepare a baking sheet lined with parchment paper. Pat zucchini slices with a paper towel to remove excess moisture. Arrange zucchini slices on the baking sheet and season with salt and pepper. Then sprinkle parmesan on each.
Bake for 20-25 minutes or until they turn golden and crispy. Serve with marinara.
