No Bake Energy Balls
- 1 cup old fashioned rolled oats
- 1 Tbsp flax seeds
- ½ cup crunchy peanut butter (may substitute with creamy)
- ¼ cup dried cranberries
- ¼ cup sugar-free honey
- 2 Tbsp mini chocolate chips
Combine the oats, flaxseed, dried cranberries, chocolate chips, peanut butter, and honey in a food processor or blender and pulse until well combined.
Using about 1 ½ tablespoons of the oats mixture, form small balls and place on a parchment-lined baking sheet. Refrigerate for at least 30 minutes before serving. Seal leftovers to save for one week.
