1lb ground beef
1 (28 ounce) can whole kernel corn (low sodium)
2 (15.25 ounce) cans green beans (low sodium)
1 (14.5 oz) can of diced tomatoes (low sodium)
2 (15 ounce) cans kidney beans, drained and rinsed
1 small onion, diced
½ teaspoon dried oregano
¼ teaspoon cayenne pepper
salt & pepper to taste
Brown the ground beef in a skillet. Drain off excess grease.
In a large pot, combine the ground beef, tomatoes, corn, green beans, kidney beans, and diced onion. Season with oregano, cayenne pepper, salt and pepper. Cover and simmer for at least 50 minutes on low to medium heat if using a large pot. Stir occasionally. Serve in bowls and enjoy!
