Slow Cooker Taco Soup

SERVINGS: 6

INGREDIENTS

2 pounds lean ground beef or ground turkey
1 small onion, chopped
1 (11 ounce) can rotel
1 (15 ounce) can pinto beans, drained
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can dark red kidney beans, rinsed and drained
1 (15 ounce) can white hominy, drained
1 (14.5 ounce) can stewed tomatoes
1 package dry ranch dressing mix
1 teaspoon ground black pepper
1 package low sodium taco seasoning mix
1 ½ cups water

INSTRUCTIONS

  • Brown ground beef or turkey and chopped onion over medium heat.  Drain off any excess fat.  Place cooked meat in crock pot.
  • Add all remaining ingredients to crock pot.
  • Cook on low for 3-4 hours, or until soup is heated through.
