Slow Cooker Meal: Taco Tuesday!

Ingredients:

  • 2 pounds boneless skinless chicken breast
  • 12 whole wheat 6-8 inch tortillas
  • 1 tablespoon olive oil
  • ½ cup lime juice
  • 2 teaspoons chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon cumin

Optional ingredients for toppings:

  • Lettuce
  • Tomatoes
  • Low fat shredded cheddar cheese
  • Avocados
  • Cilantro
  • Black beans

Directions:

  • Season chicken with olive oil, salt and pepper and rub to evenly coat chicken.
  • Add all the ingredients to the slow cooker and cook on high for 2-4 hours or low for 6-7
    hours until able to shred chicken.
  • Remove chicken from slow cooker and place on a cutting board for 5-10 minutes until
    slightly cooled enough to shred.
  • Put shredded chicken back into the slow cooker and allow to cook for another 20-30
    minutes.
  • While that’s cooking, get your toppings ready for quick assembly when chicken is done.
    Chop lettuce, tomatoes, avocados, and fresh cilantro.
  • Place 2-3 small spoonfuls of chicken into a whole wheat tortilla, add desired toppings
    and enjoy!
