Mustard Baked Cod

Ingredients

  • 1 lb cod fillets
  • 2 Tbsp Dijon mustard
  • 1 Tbsp low fat mayonnaise
  • 1 tbsp olive oil
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Directions

  • Heat oven to 375°F
  • In a small bowl, mix together the mustard, mayonnaise, rosemary, salt and pepper.
  • Lightly coat a sheet pan with the olive oil and place the fish on the pan. Lightly spread the mustard mixture onto the fish.
  • Bake for 15 minutes or until an internal temperature of 145°F is reached.
  • Pair with your favorite cooked vegetable such as asparagus or zucchini and enjoy!
