
Turkey Sausage and Cheese Quiche
Ingredients
- 1 Tbsp vegetable oil
- 1 onion, chopped
- ½ lb turkey sausage
- 5 eggs
- 1 ½ cups fat free/reduced fat shredded cheddar
- 1 ½ cups fat free/reduced fat shredded mozzarella
- 1 cup green onions, sliced
- 1 tomato, diced
- Salt and pepper to taste
Directions
Preheat oven to 350° F. Lightly grease a 9 inch pie pan. Heat vegetable oil in a large skillet over medium high heat. Cook onions, stirring occasionally until onions are soft, about 5 minutes. Add turkey sausage and brown. Drain any excess liquid. Reserve 2 Tbsp of both green onions and tomatoes. Set aside. In a large bowl, combine eggs, cheese, green onion, tomatoes, salt and pepper. Add the turkey sausage mixture and mix until well blended. Pour mixture into pie pan and bake for 30 minutes or until eggs have set. Garnish with reserved green onions and tomatoes. Allow to cool for 10 minutes before serving
