Slow Cooker Meal: Salmon

Ingredients:

  • 2 pounds salmon, with or without skin
  • 2 cups water
  • 1 cup dry white wine
  • 2 garlic cloves, thinly sliced or 2 teaspoons minced
  • 2 sprigs each of tarragon, dill, and parsley or 1 Tablespoon of each
  • Salt and pepper to taste
  • 1 lemon, thinly sliced or 2 Tablespoon of lemon juice

Directions:

  • Combine water, wine, lemon, garlic, and herbs in the slow cooker.
  • Season salmon with salt and pepper, place in the slow cooker and cook on low for 1 hour.
  • Set slow cooker to switch to the warm setting after 1 hour which can then hold the salmon for several hours until ready to serve.
  • Make quick sides such as sautéed/roasted zucchini with some yellow squash and enjoy! (Tip: Already have zucchini and squash chopped and stored in the fridge to quickly cook when you get home)
